Skinny Soup & Pita Bread

The idea for this soup came to me after a good long look in my fridge the other night. I used the vegetables that sounded good to me at the moment, threw them in some vegetable broth and did a few other things that you can read about HERE. It proved deeelicious, healthy and serves as a great reheat-able left over for days after.

Today's lunch:

1 cup Kale soup with 1 warm pocket pita and table spoon of hummus.
