Kale & Red Potato Soup


I made this for dinner the other night and both my husband and I agree that this is worth making again and again.
1.5 cups shredded red kale
1 cup chopped celery
1 cup chopped carrots
2 small red potatoes, peeled/diced
2 clove garlic, diced
1 artichoke heart, diced
2 tablespoon crushed red pepper
2 tablespoon golden flax seeds
1 teaspoon salt
1 container unsalted vegetable broth

Pour vegetable broth into crockpot on high heat

toss diced potatoes in a skillet with olive oil and garlic until potatoes are golden.
add golden potatoes to vegetable broth.
add the rest of the ingredients, stir, cover for 3 hours or until potatoes are soft
serving size 1.5 cups, makes approx 5-6 servings.
Total Calories: 255 per serving
*pair with a slice of your favorite bread to add a little more substance to the meal.
