Greek Rice & Sauteed Veggies
This is so easy and so yummy.
1 cup white rice (prepared according to package)
1/2 cup greek yogurt
squeeze of lemon juice
1 tablespoon spicy mustard
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon dill
1 teaspoon cayenne
1/2 cup brussel sprouts, rough ends removed, halved.
1 yellow squash, sliced
1 zucchini, sliced
Sautee veggies in oil with salt and pepper and a dash of vinegar
mix greek yogurt, salt, pepper, cayenne, dill, mustard and lemon juice in a bowl
add cooked rice to yogurt mixture
place on a plate, top with cooked veggies and ENJOY!
